Mediterranean vegetable wrap – gluten free

When working out what to have for lunch on Sunday I decided to use one of the Old Time Bakery Wraps that I bought for my home made pizza the night before. I was interested to see how the they would go when actually using them for a wrap as most gluten free wraps are like cardboard and break as soon as you try and fold them. For inspiration I jumped onto Taste and immediately liked the look of the Mediterranean vegetable wrap (however I did modify the recipe a fair bit).I prepared all the ingredients and held my breath while I rolled the wrap to place it in the sandwich press. To my amazement the wrap didn’t break! Even better it didn’t taste like cardboard, it actually had a nice wholemeal flavour to it and the lunch was amazing. I will be making these for lunch again this weekend and cannot wait Do you go onto the internet for inspiration for weekend meals?
